Use these great mexican recipies from the  comfort of your home and have a feel of the great country from the south of the border

Corn Salsa – mexican recipies

16      ounces        Corn; Canned — Drained (1 cn)
4      ounces        Green Chilies; Canned — Drain
1      each          Jalapeno Chile — *
1/4  cup           Green Bell Pepper — Chopped
1/4  cup           Green Onions w/tops — Sliced
2      tablespoons   White Wine Vinegar
1      tablespoon    Vegetable Oil
1/4  teaspoon      Salt

*  Jalapeno chile should be seeded and finely chopped.

Mix all ingredients.  Cover and refrigerate until

chilled, about 1 hour. Makes about 2 1/3 cups Salsa.

Corn Tortillas – Mexican Recipies

2      cups          masa harina
1 1/3  cups          warm water

Stir masa harina and water together until dough holds together in a ball. Turn onto a working surface that has been dusted with masa harina. Knead quickly into a smooth ball. Divide dough into twelve pieces. Roll one piece into a ball. Place between two sheets of wax paper and flatten slightly. Press tortillas (still in wax paper) in a tortilla press until tortilla measures about 6 inches in diameter. Repeat with remaining pieces of dough, stacking tortillas, still sandwiched in wax paper, under a damp tea towel until ready for use.

When you’re ready to cook the tortillas, preheat a seasoned cast iron griddle over medium-high heat. Remove wax paper from tortilla and heat on griddle, turning frequently until it looks dry and has a golden color, about 1 to 2 minutes. Repeat with remaining tortillas.

Corn-Salsa Pita Sandwiches – Mexican Recipies

— Sandwiches: —

ears of corn
1 1/2  cups          shredded red cabbage
green bell pepper — chopped
tomato — chopped
bacon slices — cooked
pitas
1 1/2  cups          cheddar cheese — shredded — Salsa: —

1      cup           sour cream
3      tablespoons   lime juice
2      tablespoons   chopped onions
garlic clove — minced
1      teaspoon      chili powder
1      teaspoon      ground cumin
1/2  teaspoon      sugar
1/4  teaspoon      salt
1/4  teaspoon      cayenne pepper

* Only fresh corn will make this sandwich taste its very best, but use

well-drained canned corn if necessary.

SALSA: Mix all the salsa ingredients well and chill.

SANDWICHES:

1. Remove husks from corn, remove corn silk and snap off ends of

stalks. Have a pot of salted water boiling rapidly. Drop in corn ears,

cover, and cook for 5-7 minutes.

2. Remove corn from water, drain, and cut corn from cob.

3. Combine finely shredded cabbage, green pepper, tomato and cooked crumbled bacon in a large bowl. Stir in 3/4 cup of the salsa mix, blending well.

4. Cover and chill mixture. When ready to serve, fill pita bread with corn mixture, top with remaining salsa and shredded cheese.

Cast iron pans are very versatile and you can use it a variety of ways. Because it can retain very high temperatures, they are perfect for searing and frying. You can also do cast iron cooking delicious stews and soups. It is oven safe as well, so you can even make your own pastries using your iron pans. Because it distributes heat very evenly, meats will not come out dry in some parts and raw in others. However, as a safety precaution, remember that it distributes heat to the handle as well. Always wear safety gloves or mittens while cooking with cast iron. Also, avoid using cooking tools made out of metal as this will only scrape away the natural seasoning. Wooden cooking tools are highly recommended and do not use plastics, as it can melt.

You can use your cast iron pans regularly just like any other pan. Cook up sauces, sauté vegetables and boil pasta – you can use them for anything you want. For those who have new pieces of cookware, you might find that your food sticks to the bottom of the pan. This is not unusual as there is not enough seasoning. To prevent anything from sticking, you can easily add a little butter, margarine or oil to your skillet before cooking.

You can also use your cast iron skillets to bake and you can easily cook your favorite pastries with your pan without any hassle. However, as mentioned above, food tends to stick to new iron pans. To prevent this from happening, use some cooking spray or flour. Also, watch out for cast iron pans with wooden handles while they may keep the handle from getting too hot to handle, they are not safe for baking and oven use. You can only use pans with cast iron handles to bake.

If you plan to go camping, or want to cook over an open fire, you can certainly do so as well. Because the cast iron skillet can take very high temperatures, you can even place your pots on top of hot coals if you want. Dutch ovens are great to use for this purpose. When you go camping, you can also hang the pan right above the flames like a cauldron. If you turn the lid upside down, you can even use it as a frying pan or skillet. Place your pan on top of a grill so you can have more control over the temperature of your food. For those who want to go for fireless cooking, use charcoal briquettes to simulate the heat.

When cooking with cast iron, you want to preheat your pan first. Also, make sure that your cast iron pan is well seasoned so your food does not stick to the pan. The more you cook, the more seasoned your pan will be. You should also never cook any acidic food in your cast iron cookware as this can seriously damage the material. Your pan will rust and you won’t be able to use it anymore.

A cast iron skillet is one of the most basic cooking accessories available. Around for decades, cast iron skillets are so versatile (yet incredibly heavy) they can be taken from the stovetop to the oven to the grill to the campfire. You can cook anything, anytime, anywhere with a cast iron skillet. In a cast iron skillet you can make traditional cornbread, scrambled eggs, or even a restaurant style steak! Also, if you have a small cast iron skillet, you can use it as a Panini or bacon press without spending the extra money!

The Dutch Oven

No kitchen should be without a Dutch oven. In fact, one or two ovens in different sizes are an ideal addition to any kitchen. The possibilities of what a Dutch oven can be used to make are absolutely limitless. A good Dutch oven is bottom-heavy and is typically used to make baked beans, sauces, soups, chili, stews, and even chicken and biscuits. To get the most out of your Dutch oven, be sure to get one that can go from the stovetop to the oven to the table. Some of the best Dutch ovens, especially those made of cast iron covered in porcelain, cost a pretty penny but will last you the rest of your life!

The Food Processor

The food processor is one of those essential cooking accessories that every cook, especially a busy cook, should have. A food processor can be an incredible time saver. A good quality, heavy duty food processor should last a long time. Food processors with plenty of power can be huge advantages when preparing food, especially if you are pressed for time. A food processor can help chop nuts in an instant, make salad dressings, dips, and so much more. In fact, most recipes these days assume that the kitchen is stocked with a food processor and include such instructions in their details.

The Roasting Pan

Another item no cook or kitchen should be without a basic roasting pan. This cooking accessory is a classic and a must-have in any kitchen. A good roasting pan will be made with durable materials and have sturdy handles for those heavy roasts and turkeys. You will be able to prepare the best turkey, hams, and roast beefs with your roasting pan, there is no need to buy more than one. The Knives

Go ahead and splurge on a set of good quality knives, you will be thankful in the coming years. Here are recipes for a quick and easy meal that can be enjoyed by the whole family including any diabetics.  The Sausage and Kraut Skillet Meal is ready in 35 to 40 minutes.  This dish has meat, vegetables, and fruit in one skillet.  Personally, I always enjoy cornbread with sauerkraut so I have added a cornbread recipe here.  Serve these recipes either together or separately.  You are sure to enjoy them.

SAUSAGE & KRAUT SKILLET MEAL

2 tbsp canola oil

1/4 cup diced onion

1/4 cup diced green bell pepper

3 cups Deli-Fresh Sauerkraut

1 cup diced apples

2 lbs smoked sausage

In a large heavy saucepan, heat the canola oil.  Add the onion and bell pepper and saute about 5 minutes until tender.  Add the sauerkraut and apples to the skillet.  Cover and cook over low heat for 25 to 30 minutes or until the apples are tender, stirring occasionally.

Meanwhile, saute sausage until browned.  Top the hot sauerkraut mixture with sausage and serve while hot.

Yield: 6 servings

MEXICAN CORNBREAD

1 cup self-rising cornmeal

1 cup shredded cheddar cheese

1 cup whole kernel corn

1 cup milk

1/2 cup chopped onion

1 jar (4-oz) diced pimiento, drained

1/3 cup butter

2 tbsp chopped jalapeno peppers (seeded)

1/2 tsp garlic powder

nonstick cooking spray

Preheat oven at 350 degrees.

Spray a 10-inch cast-iron skillet with the nonstick cooking spray; set aside.

Combine the cornmeal and milk together in a medium bowl.  Stir until mixed.  Add the remaining ingredients and mix well.  Pour into the prepared skillet and put in the oven.  Bake at 350 degrees for 45 minutes or until golden brown.  Cut into wedges and serve warm with butter.

Enjoy!
